Quick Supper Beans

Having never been a massive fan of tinned baked beans, it never ceases to amaze me how much I love all other kinds of bean. They might be good for you health cholesterol wise - but beans are also fabulously delicious; and when mixed with some garlic, spinach and chilli... you move into the realms of bean heaven; a place that all suppers (low cholesterol or not) should get to on a regular basis!

Ingredients

  • Spinach
  • Red Onion
  • 3 Cloves Garlic
  • Red Chilli
  • Lemon
  • Beans (Butter, Cannellini, Borlotti, Flagolet)

Crush the Garlic, finely slice the Red Onion, chop the Spinach and halve the Lemon

Drain a tin or jar of your favourite Beans… Butter Beans, Cannellini Beans, Borlotti Beans – they all work with this recipe

Heat a frying pan with a little Olive Oil

Add the Red Onion and fry on a moderate to high heat for a few minutes

Add the Garlic and Beans (and Chilli if you’re using it) for a few minutes.  Don’t stir too constantly – if the Beans catch a little that will add flavour

At the last minute – add the Spinach, Herbs and a good squeeze of Lemon Juice (maybe some zest too?!)

Serve immediately with lots of Black Pepper and a little Salt…

These beans go well with almost anything – baked lamb would be delicious; garlicky peppers would also be good; possibly some saffron rice
